"Rice is an irreplaceable staple food in Japan, just as baguettes are indispensable in French cuisine. This time, I will introduce the correct way to cook such Japanese rice, which is completely different from the European rice cooking method. With this recipe, you can make delicious fluffy rice. Please try it!" -Chef Masayoshi Haraguchi.
Ingredients for 4-5 people:
300g Japanese rice 400ml water 1 bunch (about 150g) turnip leaf 3 tablespoon soy sauce 3 teaspoon sugar 2 tablespoon sake 1 packet dashi powder 2 teaspoon sesame seeds
1 tablespoon sesame oil
a little ginger
Put 2 cups of rice (one cup is 150g) and plenty of cold water in a saucepan and gently wash the rice. Discard the water and repeat the process 3-4 times or until the water is slightly clear.
Soak the rice in water for about 15 minutes. The drain the rice in a colander and leave it on a plate for about 15 minutes.
Return the soaked rice to the pan and approximately 200ml of water for every 150g of rice.
Cover the pot and bring to boil over high heat. Once boiling, reduce the heat to low and cook for 10 minutes.
Make turnip greens seasoning while cooking rice.
Wash the leaves thoroughly and chop them.
Saute the leaves and season with the seasonings.
Reduce until there is no more liquid.
When the rice is cooked, remove it from the heat and leave covered for 10 minutes.
While the rice is hot, add the turnip mixture and mix. Eat it while hot!
